Mix all ingredients in a small pot, and warm over low flame until the honey melts and the mixture starts to simmer. Infuse fall flavors and colors into a bourbon cocktail, or leave out the bourbon and enjoy the flavors as a cocktail for a festive evening. Fill a tall glass with ice. Build the drink by adding the bourbon, then the juice, then filling with ginger ale. Stir. Top with fresh shaved ginger and pomegranate seeds.
