Makes 4 dozen1⁄2 cup peanut butter4 oz. unsalted butter1⁄2 cup sugar1⁄2 cup brown sugar2 eggs2 tsp. vanilla extract1 cup flour1⁄2 tsp. baking soda1⁄4 tsp. salt Cream the peanut butter, butter and sugars until very fluffy. Beat in the eggs and vanilla until blended; combine the flour, salt and baking soda and add to the peanut butter and egg mixture. Allow the dough to chill for at least 1 hour. Roll the dough into 1-inch balls and place them 1 inch apart on a cookie sheet. Flatten the balls with a fork, criss-cross style. Bake in a 375-degree oven for 8 to 10 minutes.(Rebecca Ets-Hokin) J.
