Makes 24
12 ripe apricots, halved and seeds removed
1 Tbs. fresh lime juice
1 cup ricotta or cottage cheese
2 Tbs. honey
pinch cinnamon
1/2 cup chopped pistachios
Sprinkle apricot halves with lime juice.
In a blender or food processor combine cheese, honey and cinnamon until smooth. Fill apricot halves with cheese mixture. Sprinkle with pistachios.
