Serves 6

1 red bell pepper, diced
1 orange bell pepper, diced
2 tomatoes, seeded and diced
1 onion, chopped
1 cucumber, peeled, seeded and diced
1/4 cup fresh lemon juice
4 Tbs. olive oil
salt and pepper

In a large bowl combine all ingredients. Taste for salt and pepper.
